We are trying to take lessons from those who have come before us, and when we decided to open a butcher shop we thought a long time about how shops where run and operated before the industrial food revolution after World War II. It made sense that with more and more people focused on what they are eating, that we could go back to a simpler time when livestock was raised simply, locally, and sold purely.
And so the focus became animals sourced from local farms, that are naturally raising their animals with no hormones or antibiotics. Beef that is 100% Grass-fed, Pork that is raised on Non-GMO feed, Lamb that is pastured, and Organic and Free-Range Chickens. This is the way all animals were raised in the past, and we thought now is the time to bring “Better tasting food, that’s better for us”.
We are a whole-animal butcher shop, that fabricates everything in house. We personally visit each of the farms we represent, to meet the farmers, and see the way the animals are being raised. We also believe in a responsibility to our community and environment. We recycle in our shop, as well as compost, so that we can contribute to the circle of life, responsibly.

Participants are treated with and selection of house-made Charcuterie while we meet each other and get ready for the event. We will work through, butchering a half a pig, talking about where everything comes from and the many different ways to cook all of the delicious parts.
We finish with another small treat, and you leave with about 5 pounds of pork that you helped make.

You will learn the basic techniques of making sausage and how to develop recipes. We will actually go through the process of preparing ingredients, grinding and making the mix, stuffing and twisting. You will leave with a couple pounds of the sausages that you helped make.
